2 cups Diced Pineapple 2 cups BLACKBEARD'S POINT Silver Rum
1 cup Lightly packed mint leaves 3/4 cup Lime Juice
Ice Few mint leaves for garnish
1 1/2 cup Chilled Club Soda Lime for garnish
Muddle Pineapple and mint, stir in rum, lime juice and one cup pineapple syrup. Pour into glass with ice and top with club soda. Garnish with lime and mint.
*Pineapple syrup. 1 1/2 pounds of pineapple chunks with 2 tablespoons dark brown sugar. Boil pineapple, brown sugar and 4 cups of water. Simmer until reduced, strain.
